Additional lab notes: This is an exceptional coffee and we just can’t get enough of it. The unique flavors arising from the anaerobic and natural process methods are especially pronounced, and this lot certainly meets the expectations for a ‘wild’ tasting coffee. The flavors are bold, and the mixture of fruit and wine notes come together as red sangria with nuanced spice notes in the finish. This lot is from a single bean variety, JARC74158. This is our first bean from Ethiopia with a known, single varietal, rather than a mix of heirloom varieties. The variety name originates from the group Jimma Agricultural Research Centre, a federal research center in Ethiopia who does research into, and development of coffee varietals.

Preferred brew method: Pour Over, Aeropress, French Press, Drip. This is an absolutely incredible coffee that will stand out however it is brewed.

About the origin: This coffee is from the Gatta Farm, located in the Shantawene village in Sidama, Ethiopia. The farm is relatively new, with coffee first being planted in 2013. The coffee plants grow in a natural forest with indigenous trees, rivers and waterfalls. The farm also has a processing station onsite. You can actually find this farm on google maps! Daye Bensa is a coffee processing group. We previously carried another anaerobic natural from this same processing goup, but using a larger pool of farms and bean varieties in the region rather than a single farm and coffee variety.

About the processing method: Anaerobic Natural. This coffee is floated and then undergoes an anaerobic fermentation with the coffee cherry intact, where the coffee is submerged in an environment depleted of oxygen. Afterwards, the fermented coffee cherries are dried in thin layers on raised beds (natural process). This combination results in a very fruit forward flavor profile with funkier, wine like notes. If we had to pick our favorite coffee processing method, this is it.
